Good ways to gain muscle weight?

What would be an ideal weight for someone 5'8, I'm 115 pounds now and I run, I'm willing to give up running as long as I get a good amount of upper-body and lower-body work outs. I can go to the gym about 2 and a half to 3 hours a day for every day of 2 months 3 weeks. I have acess to whey protien and stuff. So how much weight should I gain and what are the work outs/dietary measures that I would need to take? And, also, how long do you think it will take for me to get the recommended weight? I just need like a step-by-step guide if it's possible.
